Last Sunday we took a day trip up to a nearby maple farm. It was a wonderful educational afternoon. We learned the legend of how maple syrup was discovered, how the collection is done, sap filtered and pumped into the boiler. We were taught about the differences in syrup types as well as the difference between Canadian standard and Vermont standard. This farm is free to the public and they do this on top of full time jobs. During the outside talk, Farmer Paul was talking about freezing and skimming the ice off sap buckets. He jumped and stomped down to demonstrate kids stomping on puddles. Unbeknownst to him he was actually standing in a puddle. When he landed he splashed quite a few of us but most of our family. I am pretty sure the kids enjoyed themselves and have a new love for maple syrup. We were able to taste raw sap, 8% sugar concentration and then fresh syrup.
